Course Goal / Objective
To discuss the physical, psychological and economic factors affecting food choice, to create motivation for healthy food choices, to explain models for healthy nutrition, to gain the ability to use the necessary tools for healthy food choice, and to increase awareness about healthy food choice in special situations.
Course Content
Importance of food choice in adequate and balanced nutrition, Biological factors affecting food choice (hunger, appetite, taste, etc.), Appetite mechanism and food choice, Taste perceptions and food choices (sweet, salty, sour and bitter tastes-food choices), Genetic taste markers, Economic factors that affect food choice (cost, price, food availability, etc.), Physical factors that affect food choice (accessibility, education, cooking knowledge and time, etc.), Social factors that affect food choice (culture, family, friends and meal order, etc.), Psychological factors that affect food choice (mood, stress and guilt, etc.), Food neophobia, Factors that prevent nutrition and lifestyle changes, Nutrition labels and nutrient pattern profiles in food choices, Food choice in childhood, Food choice and taste in obesity, Food choice and eating disorders.
