Course Goal

To define marine nutraceuticals and to grasp the trends and expectations about nutraceuticals, to learn the methods of obtaining nutraceuticals such as omega-3 fatty acids, chitin, chitosan, carotenoids, collagen and gelatin from marine sources, to evaluate and interpret the potential use of nutraceuticals.

Course Content

An overview of current marine nutraceuticals. Origin of omega-3 fatty acids and their use in functional foods. The use of chitin and chitosan as fat and cholesterol lowering, glucosamine production and health benefits, potential uses of marine proteins, carotenoids as nutraceuticals. The use of carotenoid compounds such as fucosanthine and astaxanthin obtained from marine algae in functional foods. Various natural products isolated from marine macroalgae, microalgae, bacteria, fungi and cyanobacteria and their usage possibilities.
